Samovodska charshia


Thin strands of dough are rolled out on a large heated copper pan and describe beautifully cylindrical circles. While spinning it by hand, Dobrin Trifonov explains how to make kadaif – the biggest specialty at the Samovodska charshiya. Veliko Tarnovo is the only place in Bulgaria where this sweet temptation is made as it was centuries ago – with simple ingredients and a lot of work. Curious passers-by immediately stick to the windows to see how the magic happens, and attracted by it, enter the shop to buy kadaif, or baklava with various fillings.
